Cashews are an underutilized ingredient in the world of desserts. 1. Cashew Butter Mousse Pie

Cashews are rich in protein, magnesium and iron, but they’re also low in fat and cholesterol – making them a great choice for anyone watching their health or weight. Cashews are naturally gluten-free, so this recipe is perfect for anyone who has food allergies!

To make this pie:

  • Combine cashews (unsalted), cacao powder, maple syrup and water into a blender or food processor until smooth paste forms; set aside until ready to use later on during preparation steps below… 2) In large bowl combine coconut milk (full fat), lemon juice & zest from one lemon along with 1/4 cup sugar then mix well until combined… 3)… 4)… 5)… 6)…

Add cashew mixture, lemon juice & zest into the bowl with coconut milk and whisk until smooth. Pour filling into a pie crust and chill in refrigerator for at least 4 hours before serving (preferably overnight). Top with fresh berries when ready to serve!

2. Chocolate and Peanut Butter Cashew Cookies

The recipe for these cookies is simple and requires just a few ingredients:

  • 1 cup of cashews (soaked overnight)
  • 2/3 cup sugar
  • 1/2 cup butter or coconut oil, melted
  • 1/4 cup peanut butter (creamy or crunchy)

To make the dough, combine all of these ingredients in a food processor and process until smooth. Roll into balls about the size of golf balls and place on a parchment-lined baking sheet about 2 inches apart from one another. Bake at 350 degrees F for 10 minutes until golden brown on top; let cool completely before serving with Peanut Butter Cashew Cream Cheese Icing below!

The icing recipe is also very straightforward: Combine 1/2 cup softened cashews (or more if needed), 3 tablespoons sugar and 3 tablespoons cocoa powder; mix well until fluffy then spread onto cooled cookies!
