The recipe for these cookies is simple and requires just a few ingredients:
- 1 cup of cashews (soaked overnight)
- 2/3 cup sugar
- 1/2 cup butter or coconut oil, melted
- 1/4 cup peanut butter (creamy or crunchy)
To make the dough, combine all of these ingredients in a food processor and process until smooth. Roll into balls about the size of golf balls and place on a parchment-lined baking sheet about 2 inches apart from one another.
